Easy, Yummy, Healthy - Kale & Mushrooms


This is my go to veggie dish! a.k.a make it when I haven't had a veggie in days dish.
and it is super duper easy to make! We eat it with some spicy sri lankan rice and curry or take it for lunch sandwiched between two pita's!

What I usually use:

Kale (Chopped)
2 -Portobello Mushrooms (Coarsely cut)
Half a Red Bell Pepper (Chopped)
Half an Onion
2 cloves - Garlic
2 Tsp - Red chili flakes
1 tsp: Paprika
2 Tbsp - Olive oil
Salt and Pepper to taste

Optional :

Sri Lankan Curry Powder (or you can use Indian Garam masala which is more readily available)

What I did:
1. Heated the olive oil on a pan
2. Put in the garlic and onion and sauted it til light brown
3. Added the Portobello Mushrooms and sauted it for about 5 minutes
4. Added in the chopped red bell pepper nd mixed around for 3 minutes
5. Added in the Kale
6. Added the Chili flakes, Salt and Pepper, Curry powder and paprika
7. Mixed around for about 5 more minutes
8. I was done! So we enjoyed it with some chicken curry, Lentil curry and rice :D
